Blade _ Martensitic steel AISI 420 N.1.4034 X46Cr13 and N.1.4419 X38CrMo14 - Hardness 54/56 Rockwell degrees.


Handle _ Polyamide (nylon) PA6 - non-toxic, non-deformable - resistant up to 180° C - die-cast directly onto the blade.

All materials are suitable for contact with food in compliance with National regulations (DM 21.03.73 and subsequent amendments) and the EEC Directive (89/109).

What is the RIAL – Macello Emilia Mod. 3 cm 16 Knife used for?

The 16 cm RIAL Old Style Macello Emilia knife is the traditional tool of Emilian butcheries for processing beef and pork carcasses. The compact 16 cm blade with a height of 4.0 cm is designed for operations around the legs, joints, and during evisceration, ensuring solidity in anatomical cuts even in the tightest spaces of the carcass. The compact format offers the necessary maneuverability for precise work in the initial stages of butchering.
