Blade _ Martensitic steel AISI 420 N.1.4034 X46Cr13 and N.1.4419 X38CrMo14 - Hardness 54/56 Rockwell degrees.

Handle _ Polyamide (nylon) PA6 - non-toxic, non-deformable - resistant up to 180° C - die-cast directly to the blade.

All materials are suitable for contact with food in accordance with National regulations (DM 21.03.73 and subsequent amendments) and EEC Directive (89/109).

What is the RIALINOX® Knife – Curved Boning Knife Mod. 483 cm 15 used for?

The 15 cm curved RIALINOX® knife is the reference version for boning all species with curved bone profiles: cattle, pigs, poultry, sheep, and goats. The 15 cm curved blade with a height of 2.6 cm balances the necessary coverage for long ribs and bovine rib cages with the maneuverability for medium joints of pigs and medium-sized poultry. The AISI 420 martensitic steel with 54/56 HRC hardness ensures edge retention in the most varied processing sessions.
