Some tips for achieving the best knife edge for its intended use:

  1. Wash the knife thoroughly to remove grease from the handle and blade.
  2. Check the efficiency and proper functioning of the sharpener.
  3. Sharpen with a suitable grit wheel or belt in a water bath.
  4. Ideal sharpening angle 27°. To optimize knife performance and work safely, the edge angle must be specific for:
    • Slicing: razor edge
    • Trimming/Portioning: semi-round edge
    • Opening and boning with bone contact: rounder edge
  5. After sharpening, remove the burr with a fine stone or by hand.
  6. Finally, polish the edge with felt for a smoother cut.

Repeat washing and sterilization of the knife before storing it.
