Thanks to the low speed of the abrasives, there is no risk of injury to the operator. Water sharpening and the low speed of the grinding wheels prevent the blade from overheating. The hardness of the steel is not compromised, even in the outermost area of the blade's edge. Magnetic guides allow for precise and uniform sharpening that is impossible to achieve freehand. With the ability to individually adjust the sharpening and grinding angle, it is possible to find the optimal edge for each application and obtain maximum edge durability.

Some tips for achieving the best knife edge for its intended use:
- Wash the knife thoroughly to remove grease from the handle and blade
- Check the efficiency and proper functioning of the sharpener
- Sharpen with a suitable grit wheel or belt, wet.
- Ideal sharpening angle 27°. To optimize knife performance and work safely, the edge angle must be specific for:
- Slicing: razor edge
- Trimming/Sectioning: semi-round edge
- Opening and boning in contact with bone: rounder edge
- After sharpening, remove burr with a fine stone or by hand with a whetstone.
- Finally, polish the edge with felt for a smoother cut.
Repeat washing and sterilization of the knife before storing it.
