Blade _ Martensitic stainless steel AISI 420 N.1.4034 X46Cr13 and N.1.4419 X38CrMo14 - Hardness 54/56 Rockwell degrees.

Handle _ Polyamide (nylon) PA6 - non-toxic, non-deformable - resistant up to 180° C - die-cast directly onto the blade.

All materials are suitable for contact with food in accordance with National regulations (DM 21.03.73 and subsequent amendments) and EEC Directive (89/109).

What is the RIALINOX® Knife - Boning Knife with Central Tip Mod. SR 14 cm used for?

The 14 cm RIALINOX® knife with central tip has a unique geometry in the BONING range: the tip is positioned in the center of the blade's cross-section, creating a symmetrical profile that allows working on both sides of the bone with the same effectiveness. The 14 cm blade with a height of 3.0 cm is designed for boning operations that require direct penetration and two-way work around the bone, such as in processing bovine and porcine spine and sternum.
