The RIALINOX® FOOD Worn-Type Boning knife is available in three sizes (16, 14, 12 cm) to adapt to the various needs of the butcher's counter, deli, and professional kitchen. The "worn" profile — with the blade progressively narrowing towards the tip — allows for maximum precision in detailed tasks: separation between adjacent muscles, trimming of fillets, preparation of escalopes and bite-sized pieces with minimal meat waste.
